4 cups of cauliflower rice
1 cup of almond flour
2 onions peeled and chopped
cup of fresh parsley
6 teaspoon of ground coriander seed
4 teaspoons of ground cumin
6 cloves of garlic peeled and chopped
1.5 teaspoons of seasalt
teaspoon of black pepper
cup of coconut flour
Olive oil
Rice the cauliflower by placing the florets into a food processor and blitz till you have rice like texture
Cook the rice in a frying pan with a little olive oil for 5 minutes stirring occasionally. Then allow to cool
Meanwhile blitz the onion, parsley, coriander seed, cumin, garlic, seasalt and black pepper. Add this to the cauliflower with the almond flour and the coconut flour. Mix well.
Using your hands shape the mixture into large walnut shape balls flatten slightly and place on a greased silicon sheet in a baking tray.
Drizzle the falafels with a little olive oil and then place in a 220 degrees C oven for 30-40 minutes you may want to turn them over half way through.
These are scrumptious with a big green salad very filling. If you are ok with dairy they are wonderful with a homemade tzatziki. This is grated cucumber drained well mixed with a bit of crushed garlic and full fat natural yoghurt.
